In January 2006 they opened their first tea store in Phoenix, Arizona. A wide variety of classes are offered, where either Kersten or Bret are the instructors and share their knowledge and love of teas with their students. At the class I attended we learned where tea comes from, what the different types of teas are, what they look like, how to properly prepare a cup of tea, and we tasted and compared Green, White, Black and Oolong teas. I had never made a cup of tea without a tea bag before! Factoid: What does Souvia® mean? The word is an original creation. "Sou" is from the word soul reflecting our belief that tea and the traditions surrounding it are good for one's soul. "Via" is the last part of Kerstin's middle name, Olivia. Together, the name of the business is the Soul of Olivia.
