Ingredients:
- Banana Bread
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs beaten
- 2 1/3 cups mashed overripe bananas
- Tempura Batter
- 10 oz AP Flour
- 1 oz Baking Powder
- 1.5 oz Cornstarch
- 4.5 oz Sparkling Water, ice cold
- Banana Bread Tempura
- 8 slices Banana bread
- As needed Tempura batter
- 4 TBL Bliss Maple Syrup (available at www.Blisgourmet.com, or sub your favorite maple syrup)
- 16 slices Bananas
- 4 TSP Sugar
- 4 TBL Whip Cream
- 4 Scoops Cinnamon Ice Cream
- As needed Mint Syrup
- 4 each Lace Tuile
- 4 each Mint sprigs
Preparation:
Banana Bread
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
Tempura Batter
1. In a medium bowl fold the water into the dry ingredients. Keep refrigerated until ready to use.
Banana Bread Tempura
1. Preheat fryer or oil to 325 F.
2. On a steel plate or sheet pan, shingle out the bananas and sprinkle a little sugar on each piece. Caramelize with a torch but do not burn. Reserve for plating.
3. Dip the banana bread into the cold tempura batter and place into hot oil. Cook until golden brown and flip over. Continue to cook until golden on both sides. Remove from the oil and place onto dry paper towels.
4. Assembly: Place the one slice of the fried banana bread onto the plate. And top with two slices of caramelized bananas. Place another slice of bread topped with two bananas.
5. Next place a dollop of whip cream and then the lace tuile. Place the scoop of ice cream on the tuile and garnish with the mint.
6. Finish the plate with the Bliss maple syrup and mint syrup
