Potato Pancakes

Chompie's prides itself on being the Valley's favorite "New York Style Deli Restaurant, Bagel Factory and Bakery." Potato pancakes, also known as latkes, are especially popular for Hanukkah.

Ingredients:

  • 6-large russet potatoes
  • 2-large yellow onions
  • 4-eggs
  • 1/2 cup matzo meal
  • 2-tsp salt
  • 1-tsp black pepper
  • 1 1/2 tsp onion powder
  • 1/4 tsp baking powder

Preparation:

Shred potatoes on a grater and put in large mixing bowl. Dice onions and put in with potatoes. In a separate bowl mix eggs, salt, pepper, onion powder and baking powder. Mix liquid in with potatoes and onions. Slowly pour and fold matzo meal into bowl. In a frying pan place about a 1/4 inch of vegetable oil and bring to temperature. Scoop mixture into pancakes that are about 3 inches in diameter and fry till golden brown then turn over until done. Yield: about 24 pancakes.
