This recipe was provided courtesy of Roaring Fork in Scottsdale, Arizona.
Yield: 8 - 10 servings
Ingredients:
- 1 each baguette (large), diced and left overnight
- 4 oz of butter
- 1 each yellow onion, diced
- 1 each carrot
- 2 each celery
- 1 teaspoon of sage
- 2 cups of chicken stock
- 8 oz. of turkey sausage
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- 1 tablespoon of Italian Parsley
- Salt & Pepper to Taste
Preparation:
1. In a small pot, add turkey sausage and cook for three minutes
2. Add the butter and vegetable and cook for two minutes
3. Add bread and stir for one minute
4. Slowly add chicken stock and stir
5. Cook until the bread is soft and liquid (almost gone)
6. Add herbs
7. Add salt and pepper to taste
8. Place in a serving dish
9. Broil at 350 degrees until golden brown
