Pastry Chef Jon Spahr of Canal in Scottsdale, Arizona shares his recipe for Caramelized Apple Brown Butter Tart. You shouldn't have any trouble finding all the ingredients at your local market.
Ingredients:
- 13 tablespoons of melted unsalted butter
- 1 each vanilla bean, split and scraped into butter
- 4 each large eggs
- 1 cup of granulated sugar
- ½ cup of all purpose flour
- 1 stick of whole unsalted butter
- 1 teaspoon of cinnamon
- ½ cup of brown sugar
- 2 each granny smith apples, peeled cored and sliced
- ¼ cup of brandy
Preparation:
1. In a large sauté pan melt butter over medium high heat.
2. Add sliced apples into hot butter and sauté for about one minute.
3. Add cinnamon and continue to sauté for one minute.
4. Stir in sugar and continue cooking until mixture is bubbly (about one minute).
5. Remove from heat and add the brandy, return to heat.
6. Continue cooking for one minute (brandy may ignite).
7. Set aside and reserve.
8. In small sauce pan, brown the butter and vanilla bean over medium low heat, cool again and strain.
9. Whisk together eggs, sugar, and zest until incorporated.
10. Add flour until incorporated.
11. Add browned butter into mixture.
12. Pour batter into an 8 inch greased cake pan or 4 ramekins.
13. Place apples on top of batter and bake at 350 for 15-20 minutes or until toothpick comes out clean.
14. Serve warm with a scoop of your favorite ice cream.
