Ingredients:
- --SLOW ROASTED PULLED PORK
- 2-1/2 to 3 lbs pork shoulder roast, trimmed
- 1 cup chicken stock
- 1 cup barbecue sauce
- 1 medium white onion, diced
- 2 poblano chiles, diced
- 1 tsp cumin
- 1/2 cup fresh Mexican oregano
- 1/4 tsp ground cinnamon
- --GRILLED CORN CAKES
- 1/2 cup flour
- 1/2 cup yellow cornmeal
- 1 tsp baking powder
- 1 tbs sugar
- 1 egg, lightly beaten
- 1 cup corn, off the cob or canned cream corn
- 2 tbs canola oil
- 1/2 cup milk (may use less)
- --ARCADIA FARMS GUACAMOLE
- 3 medium avocados
- 2 tbs onion, minced
- 1/3 cup chopped cilantro
- 1 jalapeño pepper, seeds removed finely diced
- 1 clove garlic
- juice of 1/2 lime
- kosher salt and fresh cracked pepper to taste
- --LIME CREME FRAICHE
- 1/4 cup creme fraiche or sour cream
- 2 tbs freshly squeezed lime
Preparation:
Place pork roast in Dutch oven. Pour all ingredients over pork roast. Cook on LOW heat for 8 hours or until pork easily pulls apart. Check periodically to be sure that there is liquid in the kettle so that the pork does not burn. Remove pork when done and let cool. Pull pork with fork or fingers and place in a bowl. Add salt and pepper to taste.
Grilled Corn Cakes
Mix the dry ingredients in a bowl. Mix egg, corn and oil in a separate bowl. Combine dry and wet ingredients together and add enough milk to make a thin batter. Using 1/4 cup measuring cup, drop batter on a hot, greased griddle. When batter is golden brown on the bottom, flip pancake and finish grilling.
Arcadia Farms Guacamole
Slice avocado in half. Remove pit by placing knife into seed and twisting. Use spoon to scoop out avocado pulp. Place avocado in bowl and add lime juice, salt and pepper. Mash avocado mixture until just chunky. Fold in chopped onion, cilantro, jalapeño and garlic.
Lime Creme Fraiche
Mix both ingredients together in a small bowl.
Grilled Corn Cakes with Pulled Pork, Avocado Salsa and Lime Creme Fraiche
Once all four components of the dish have been prepared, place a heaping portion of pulled pork on a grilled corn cake. Top with guacamole and a small dollop of Lime Creme Fraiche.
