This recipe for Whipped Sweet Potatoes, provided compliments of Chef Jon Andersen at Rawhide Steakhouse & Saloon in Chandler, Arizona, makes a perfect accompaniment to most any holiday entrée. He especially recommends it as a side dish to his Lamb with Minted Cranberry Compote.
Ingredients:
- 5 lbs. Peeled sweet potatoes
- ½ lb. butter
- 1 cup Heavy Cream
- 4 oz Maple syrup
- 3 oz brown sugar
- 1 tsp nutmeg
- Salt and Pepper to taste
Preparation:
Boil sweet potatoes to tender. Add all ingredients and whip. Salt and pepper to taste. Serves 4 to 6 people.
